Variation:
Apples are divided into dessert (or eating) and cooking apples. While cooking apples can only be used for culinary purposes because they have a sour taste, some dessert apples, especially if firm, can be used in cooking. Look for smooth-skinned apples and avoid any with brown bruises.

Preheat the oven to 180ºC/350ºF/ Gas 4. Remove
the cores from the apples, leaving them whole.

With a canella or sharp knife, cut lines through
the apple skin at intervals and place in an
ovenproof dish.

Mix together the honey, lemon rind and juice,
and low fat margarine.

Spoon the mixture into the apples and cover the
dish with foil or a lid. Bake for about 40-45
minutes, or until the apples are tender. Serve
with custard made from skimmed milk.

This recipe can also be cooked in the microwave to save time. Place the apples in a microwave-safe dish and cover them with a lid or pierced clear filin. Microwave on FULL POWER (100%) for about 9-10 minutes.
