A delicious family favourite pud from grandmother’s day, with a lighter, healthier touch.
 

FRUITY BREAD

Serves: 4













 

Ingredients:

  • 175g cup mixed dried fruit

  • 150ml cup apple juice

  • 115g stale brawn or white bread, diced

  • 5ml mixed spice

  • 1 large banana, sliced

  • 150ml cup skimmed milk

  • 15ml demerara sugar

  • Natural low fat yogurt, to serve


Instructions:

  1. Preheat the oven to 200°C/400°F. Place the dried fruit in a small pan with the apple juice and bring to the boil.

  2. Remove the pan from the heat and stir in the bread, spice and banana. Spoon the mixture into a shallow 1.2 litre/2 pint/ 5 cup ovenproof dish and pour over the milk.

  3. Sprinkle with demerara sugar and bake for 25-30 minutes, until firm and golden brown. Serve hot or cold with natural yogurt.

COOK’S TIP:
 

Different types of bread will absorb varying amounts of liquid, so you may need to adjust the amount of milk to allow for this.
