A delicious family favourite pud from grandmother’s day, with a lighter, healthier touch.

Ingredients:

175g cup mixed
dried fruit

150ml cup apple
juice
-
115g stale brawn
or white bread, diced

5ml mixed spice
-
1 large banana,
sliced
-
150ml cup skimmed
milk
-
15ml demerara
sugar
-
Natural low fat
yogurt, to serve
Instructions:

Preheat the oven to 200°C/400°F. Place the dried fruit in a small pan with the apple juice and bring to the boil.

Remove
the pan from the heat and stir in the bread,
spice and banana. Spoon the mixture into a
shallow 1.2 litre/2 pint/ 5 cup ovenproof dish
and pour over the milk.

Sprinkle with demerara sugar and bake for 25-30 minutes, until firm and golden brown. Serve hot or cold with natural yogurt.

COOK’S TIP:
