Spicy fried rice with chicken

Serving : 4
 

Ingredients

  • 30 ml oil 

  • 200 g rice, steamed 

  • 100 g boneless chicken, sliced 

  • 5 g garlic, sliced 

  • 10 g red chillies, sliced lengthwise 

  • 5 g fresh basil leaves 

  • 5 ml soya sauce 

  • 1 tsp sugar 

  • salt to taste 

  • 10 ml chicken stock 3 ml fish sauce

    Directions

  • Heat the oil in a pan, and add the garlic and chillies. Saute for a few minutes, them add the chicken, soya sauce, sugar, salt, chicken stock and fish sauce. 

  • Allow to cook for six to seven minutes, stirring frequently. Add the rice and continue to cook for another five minutes, till most of the moisture has been absorbed.

  • Just before serving, stir in the basil. Serve hot.
