Ingredients

60gms fresh button mushrooms

10gms shiitake mushrooms

5gms gucchi (morels)

50gms spring onions (finely chopped)

5gms garlic (finely chopped)

10ml lemon juice
-
10gms pine nuts (chilgoze)

5ml extra virgin olive oil
-
salt and pepper to taste.
Directions

Soak the gucchi and shiitake mushroom
for half an hour. Slice the button mushrooms and keep aside.

Heat oil in a nonstick/heavy bottomed pan.
Add garlic, spring onion (bulbs only) and toss till done.

Add all the mushrooms, cover and cook till
done.

Season with salt, cracked pepper and lemon
juice.

Serve warm garnished with spring onion
greens and pine nuts.
