COOK'S TIP -
For a main meal, add some diced, cooked chicken, a
handful of prawns, or some grated Parmesan cheese and a few chopped nuts, when
you add the rocket. Make sure all the ingredients are heated through
thoroughly before serving.
Ingredients
- 1 teaspoon olive oil
- 1 onion, finely chopped
- 300 g (10 oz) Arborio rice
- 1.2 litres (2 pints) Vegetable Stock
- 50 g (2 oz) rocket leaves
- salt and pepper
Directions

Heat the oil in a nonstick frying pan, add the onion and fry for a few
minutes until softened. Pour in the rice and stir well to coat the
grains.

With the pan set over a medium heat, gradually add a little vegetable
stock. Stir continuously while the stock is absorbed into the rice.
Keep on adding the stock a little at a time - this will take about 20 minutes.

Stir in the rocket, reserving 4 leaves for garnish, and cook just until
the leaves start to wilt. Season to taste and serve each portion
garnished with a rocket leaf.
