Lovable Sweet

APPRICOT MOUSSE

This light, fluffy dessert can be made with any dried fruits instead of apricots � try dried peaches, prunes or apples.

 

Serves: 4

 

Ingredients:

  • 300g/10oz/1� cups ready-to-eat dried apricots

  • 300ml/ � pint/ 1� cups fresh orange juice

  • 200g/7oz/7/8 cup low fat fromage frais

  • 2 egg whites

  • mint spriges, to decorate

Instructions:

  • Place the apricots in a saucepan with the orange juice and heat gently until boiling. Cover and simmer gently for 3 minutes.

  • Cool slightly. Place in a food processor or blender and process until smooth. Stir in the fromage frais.

  • Whisk the egg whites until stiff enough to hold soft peaks, then fold into the apricot mixture.

  • Spoon into four stemmed glasses or one large serving dish. Chill before serving.

COOK�S TIP:
