This light, fluffy
dessert can be made with any dried fruits instead of apricots � try
dried peaches, prunes or apples.
Serves:

Ingredients:

300g/10oz/1� cups ready-to-eat dried apricots

300ml/ � pint/ 1� cups fresh orange juice

200g/7oz/7/8 cup low fat fromage frais

egg whites
-
mint spriges, to decorate
Instructions:

Place the apricots in a saucepan with the orange
juice and heat gently until boiling. Cover and
simmer gently for 3 minutes.

Cool slightly. Place in a food processor or
blender and process until smooth. Stir in the
fromage frais.

Whisk the egg whites until stiff enough to hold
soft peaks, then fold into the apricot mixture.

Spoon into four stemmed glasses or one large
serving dish. Chill before serving.

COOK�S TIP:
To make a speedier fool-type dish, omit the egg whites and simply
