CHICK-PEA CASSEROLE

Ingredients:

Chick-peas �4 cup

Olive oil- 2 tbs

Onion �2 medium

Tomato � 3 medium

Tomato paste � 1 cup

Water- 1 cup

Coriander (ground) � 1 tsp

Cumin seed � 1 tsp

Cayenne pepper- I tsp

Turmeric powder �1/4 tsp

Cilantro-1/2 cup

11/2 tsp salt

 

Method:

  • Soak chick-peas overnight in water to cover. Drain and add water to cover to a depth of 11/2  inches .

  • Add salt and simmer for 2 hours or longer until chick-peas are tender .

  • Meanwhile chop the tomatoes and slice 2 medium onions

  • Heat oil in a saucepan ,add onions and cook until wilted

  • Add tomatoes and tomatoes paste , water and spices

  • Cook chick-peas and simmer 30 min longer

  • Serve hot over rice , garnished with onion cut into rings and cilantro .
