Instructions :   

  • Cook the potatoes in a saucepan of boiling salted water for 20 minutes, then drain. Return the potatoes to a clean pan and mash them. Preheat a griddle or heavy-based frying pan.

  • Add the flour, the olive oil and the chives to the hot mashed potato in the pan, and season with a little salt and pepper. Mix to a soft dough.

  • Roll out the prepared dough on a well-floured surface to a thickness of about 5mm/1/4in and stamp out rounds with a 5cm/2in plain pastry cutter. Lightly grease the griddle or heavy-based frying pan.

  • Cook the scones, in batches, on the hot griddle or frying pan for about 10 minutes. Using a metal spatula, turn each scone once, cooking until they are golden brown on both sides. Keep the heat low and do not allow them to burn. Top the scones with a little low fat spread, if you like, and serve them immediately, while still piping hot.

  • potatoes 450g/1lb

  • Plain flour 115g/4oz/1 cup , sifted

  • Olive oil 30ml/2 tbsp

  • Snipped chives 30ml/2 tbsp

  • Salt and freshly ground black pepper low-fat spread, for topping
