Instructions :

Peel the sweet potatoes and cut into 1cm/ � in cubes. Melt the
butter with the oil in a large frying pan. Add the sweet potato
cubes and fry, stirring frequently, for about 10 minutes until they
are just soft.

Stir in the garlic, ginger and ground allspice. Cook, stirring
occasionally, for 5 minutes more. Stir in the ginger syrup, a
generous pinch of cayenne pepper and the chopped thyme. stir for 1-2
minutes more, then serve in warmed bowls scattered with fresh thyme
sprigs.
