Glazed Sweet Potatoes with Ginger and Allspice


Introduction:

Fried sweet potatoes acquire a candied coating when cooked with ginger syrup and allspice, while the cayenne pepper adds a touch of zing.

Instructions :   

  • Peel the sweet potatoes and cut into 1cm/ � in cubes. Melt the butter with the oil in a large frying pan. Add the sweet potato cubes and fry, stirring frequently, for about 10 minutes until they are just soft.

  • Stir in the garlic, ginger and ground allspice. Cook, stirring occasionally, for 5 minutes more. Stir in the ginger syrup, a generous pinch of cayenne pepper and the chopped thyme. stir for 1-2 minutes more, then serve in warmed bowls scattered with fresh thyme sprigs.

  • 900g sweet potatoes

  • 50g/� cup unsalted butter

  • 45ml/3 tbsp oil

  • 2 garlic cloves, crushed

  • 2 pieces stem ginger, finely chopped

  • 10ml/2 tsp ground allspice

  • 15ml/1 tbsp syrup from ginger jar

  • cayenne pepper, to taste

  • 10ml/2 tsp chopped fresh thyme, plus a few sprigs to garnish
