Hot Plum Batter


Introduction:

Other fruits can be used in place of plums, depending on the season. Canned black cherries are also a convenient storecupboard substitute.

Instructions :   

  • Preheat the oven to 220�C/425�F/ Gas 7. Lightly oil a wide, shallow ovenproof dish and add the plums.

  • Pour the milk, milk powder, sugar, vanilla, flour and egg whites into a food processor. Process until smooth.

  • Pour the batter over the plums. Bake for 25-30 minutes, or until well risen and golden. Sprinkle with icing sugar and serve immediately.

Ingredients:

  • 450g/1 lb ripe red plums, quartered and stoned

  • 200ml/ 7 fl oz/ skimmed milk

  • 60ml/4 tbsp skimmed milk powder

  • 15ml/1 tbsp light muscovado sugar

  • 5ml/ 1 tsp vanilla essence

  • 75g/ 3 oz self-raising flour

  • 2 egg whites

  • Icing sugar, to sprinkle
