Instructions :

Peel and shred
potatoes; drain on paper towels. Chop chives and beat eggs.

Heat 1/4-inch oil in a
heavy skillet over medium-high heat. In a medium bowl, combine all
remaining ingredients.

Using about 1/3 cup
mixture for each, form patties 3 to 4-inches in diameter. Cook 2 to
3 minutes on each side or until lightly browned. Drain on paper
towels. Serve immediately. Makes 9 potato pancakes.
