Instructions :   

  • Peel and shred potatoes; drain on paper towels. Chop chives and beat eggs. 

  • Heat 1/4-inch oil in a heavy skillet over medium-high heat. In a medium bowl, combine all remaining ingredients. 

  • Using about 1/3 cup mixture for each, form patties 3 to 4-inches in diameter. Cook 2 to 3 minutes on each side or until lightly browned. Drain on paper towels. Serve immediately. Makes 9 potato pancakes.

  • 2/3 cup Carrot shredded, 1cup

  • 1/3 cup Onion minced

  • 2/3 Tablespoon Chives

  • 2 Tablespoons All purpose flour

  • 2-2/3 large Egg

  • 2/3 teaspoon Salt

  • 0.083 teaspoon Pepper

  • 2/3 teaspoon Salt
  • Tablespoon Chives
