MUSHROOM RISSOTTO

Ingredients:

  • Quick cooking rice- 30 gms, 

  • Chicken or vegetable broth- 100 ml (or as needed to cook the rice); 

  • Mushroom-250 gms,

  • Onions-2 large+1;

  • Tomatoes and capsicum- 2 large nos. each;

  • Tomato ketchup-1 tbsp;

  • Worcestershire sauce-4 tsp;

  • Garlic -1 whole head;

  • Pepper-1 tsp;

  • Cherry- 1 for garnishing;

  • Oil-2 tsp,

  • Salt to taste.

 

 

Method :

  • Chop garlic into tiny pieces. (Keep aside a little for the rice.)

  • Dice tomatoes, capsicum and 2 onions.

  • Cut mushroom into halves.

  • Fry garlic in 1 tsp oil till brown.

  • Add tomatoes, onion, capsicum, ketchup, Worcestershire sauce, pepper, mushrooms and salt to taste.  Cook for 10 minutes.  Transfer to a bowl; set aside.

  • Slice remaining onion.

  • Heat the rest of the oil in a pan.  Add garlic, onions, pepper, saut� for a few minutes.

  • Add rice, saut� for 1 minute.

  • Add defatted chicken/vegetable broth,.  Cook, stirring occasionally until liquid is absorbed and rice is nearly cooked.

  • Stir in the mushroom mixture.  Heat through

  • Remove from fire and serve hot garnished with a cherry.
