MIXED BEANS IN PASSATA

 


An easy but filling snack or starter.  Vary the beans to include your favourites.

   Ingredients

  • 5 ml / 1 tbsp olive oil

  • 1 medium red onion, finely chopped

  • 2 garlic cloves, crushed

  • 150 ml / 1/4 pint / 2/3 cup passata

  • 2 large sprigs fresh or dried thyme

  • 115 g / 4oz / 1 1/2 cups frozen or fresh French beans

  • 432 g / 15 oz can cannelini beans salt and black pepper

 

Directions

  • Heat the olive oil and fry the onion and garlic gently for 10 minutes until softened but not browned.

  • Add the passata and thyme and bring to the boil.  Add the French beans, then cover and simmer gently for 5 - 8 minutes until tender.

  • Add the cannelini beans, season well and serve with thin slices of wholemeal toast.
