Instructions :    

  • In a bowl with an electric mixer beat the whites with the salt until they are foamy, add the cream of tartar, and beat the whites until they hold stiff peaks. Fold in the cayenne and the Parmesan. 

  • In a deep heavy skillet or deep fryer heat enough oil to measure 2 inches deep, until it registers 375 degrees F. on a deep-fat thermometer, and into it drop the batter by tablespoons in batches.

  • Fry the puffs for 1 to 2 minutes on each side, or until they are puffed and golden, and transfer them to paper towels to drain. Makes 20 puffs

  • 1/16 teaspoon Salt

  • 1/16 teaspoon Cream of Tartar

  • 0.037 teaspoon Cayenne pepper

  • 0.6 cups Parmesan grated, 1/2 cup

  • 1-3/16 cups Vegetable oil
