Perugu Poori

Puris softened by buttermilk

Instructions :   

  • SOAK the Bengal dal in the buttermilk for half-an-hour. 

  • Chop the green chillies, coriander leaves and curry leaves very fine, and mix with the buttermilk mixture.

  • Boil the buttermilk mixture and add the rice flour, salt and grated coconut and cook for five minutes.

  • Mix well.  Remove from heat, cool and knead well.

  • Divide into small, equal-sized balls and roll out into puris.  Deep fry till golden brown.

  • 30 g Bengal gram dal (chana dal

  • 250 ml thick buttermilk

  • 250 g rice flour

  • 3 green chillies

  • 3 sprigs coriander leaves

  • 3 sprigs curry leaves

  • 25 g grated fresh coconut

  • salt to taste and oil for deep frying.
