VEGETABLE SHASHLIK

Ingredients:

  • Broccoli- 100 gms;

  • Carrot-1;

  • Pineapple-1 slice; 

  • Onion-1 small;

  • Tomato-1 small;

  • Capsicum-1 small;

  • Mushroom-2; 

  • Baby corn-2;

  • Lowfat curd -1 tbsp;

  • Chili powder - 1 tsp;

  • Turmeric power -1 tsp;

  • Salt and pepper to taste;

  • Red wine- 1 tsp;

  • Oil-1.5 tsp.

Method :

  • Cut the onions, tomato, capsicum into chunks of 1" by 1" .  Cut the broccoli into large florets.  Cut carrot into one-inch square pieces.  Cut the mushrooms into halves.

  • Marinate all the vegetables and pineapple in curd, Worcestershire sauce, salt, pepper, wine, chilli and turmeric powders for two hours.

  • Toss the vegetables and fruit in half a tbsp oil until well coated and thread onto skewers.  Grill till done, turning the skewers often.

  • Serve with plain rice or pulao.
