Venkai Poornam (An easy brinjal dish)

Nutritional Information:

Instructions :   

  • Heat 10 ml of the oil in a pan and fry the til seeds, poppy seeds, coriander seeds, turmeric powder and chilli powder for two minutes.

  • Add the tamarind, onion, ginger and dry coconut and fry for three minutes.

  • Grind the mixture to a paste, adding salt to taste and  a little water. 

  • Stuff the brinjals with this filling and set aside.

  • Heat the remaining oil and temper it with the black gram dal, cumin seeds and mustard seeds.

  • Add the stuffed brinjals and cook on a low heat till soft and done.

  • Garnish with the chopped coriander leaves.

  • Serve hot.

Ingredients :

  • Small brinjals 50 g

  • Oil 30 ml

  • Til seeds 100 g

  • Poppy seeds 25 g

  • Coriander seeds 10 g

  • Turmeric powder 5 g

  • Chilli powder 10 g

  • Tamarind 25 g

  • Onion 100 g

  • Ginger chopped 2.5 - cm knob

  • Dry coconut 50 g

  • Salt to taste,

  • Black gram dal 5 g

  • Cumin seeds 5 g and mustard seeds 5 g.

 For the garnish :

  • 1 bunch coriander leaves

WASH and cut the brinjals into four sections, in such a way that each brinjal is still held together at one end.

Place in water.
