Lovable Sweet

CHERRY NUT CAKE

MAKES: 6 servings

INGREDIENTS:

  • 1 cup All purpose flour

  • 3/4 cup sugar

  • 1-1/2 teaspoons Baking Powder

  • 1/2 teaspoon Salt

  • 5/8 cup Milk skim

  • 1/4 cup Vegetable Shortening 

  • 1 teaspoon Vanilla extract

  • 2 large Egg

  • 1/4 cup Cherries

  • 1/4 cup Mixed nuts w/peanuts

  • 8 ounces Frosting, White cloud canned

METHOD:

  • Heat Oven to 350 degrees F. Grease and lightly flour two 9-inch round cake pans. 

  • In a large bowl, combine flour, sugar, baking powder, salt, milk, and shortening mix at low speed until moistened; beat 2 minutes at medium speed. Add vanilla and egg whites; continue beating an additional 2 minutes. Add chopped, pitted, cherries and mixed nuts (unsalted). 

  • Pour into prepared pans. Bake at 350 degrees F. for 20 to 30 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans. Spread top and sides with White Cloud Frosting.
