STUFFED TOMATOES

For the dressing:

  • � tsp. Dijon-style mustard

  • 2 tsp. olive oil

  • 4 tbsp. vinegar

  • � tsp. oregano

  • A few sprigs of lemon grass

  • Salt and pepper to taste

 FOR THE TOMATOES:

  • 6 Medium size tomatoes

  • 100gm fresh cheese

  • Salt and pepper to taste

 METHOD:        

  • Slice off the tops of the tomatoes. Scoop out the pulp and keep 
    aside.

  • Sprinkle a little salt inside tomatoes and chill.

  • Mix all the ingredients of the dressing and whisk briskly. Chill for 15 
    minutes.

  • Then, strain the dressing and crumble the cheese. 

  • Mix in the two along with the tomato pulp. Rub together till soft. 

  • Stuff the tomatoes with the mixture and garnish with mint. Chill and 
    serve.
