For the dressing:

TOMATOES:

6 Medium size tomatoes
-
100gm fresh cheese
-
Salt and pepper to taste
METHOD:

Slice off the tops of the tomatoes. Scoop out the pulp and
keep
aside.

Sprinkle a little salt inside tomatoes and chill.
-
Mix all the ingredients of the dressing and whisk briskly.
Chill for 15
minutes.

Then, strain the dressing and crumble the cheese.
-
Mix in the two along with the tomato pulp. Rub together
till soft.
-
Stuff the tomatoes with the mixture and garnish with mint.
Chill and
serve.
