Blue Palace Resort and Spa is excited to unveil a new addition to its culinary family, Flame. Flame specializes in expertly cooked steak dishes prepared from finest quality, locally sourced meat with a distinct flavor and fragrance. Classic and signature cuts, some exclusive, are served on large wooden platters, complemented by the freshest ingredients from carefully selected small-scale producers in the surrounding area.

Many of the specialty herbs and vegetables are handpicked by our chefs shortly before preparation, direct from the restaurant’s purpose-built gardens. Guests will have the opportunity to visit these gardens and learn about the herbs used in the kitchen.

8. Beau-Rivage Palace, Lausanne, Switzerland

Once upon a time… Victor Hugo, Camille Saint-Saëns, Charlie Chaplin, Coco Chanel, Gary Cooper, Sacha Guitry, Hirohito, Nelson Mandela, Hussein de Jordanie…

Stars in the history of the century, who have in common the fact that they walked up on the marble and velvet of the Beau-Rivage Palace. And this is no accident. Closely linked to the development of the little port of Ouchy, the history of the hotel starts in 1857.

First years. Its huge lounges, with their

18th century frescos, were, from the very start, the scene of sumptuous balls and dinners. The exceptionally beautiful surroundings, the luxurious room furnishings and the highest standards of service soon gave the hotel an international reputation. And such was its almost immediate popularity that it quickly came to the point where the hotel had to expand.



In 1864, construction was started on an annexe, Le Chalet.

Then in 1908, in response to an ever-increasing demand, construction of the Palace was entrusted to the architects Jost, Bezencenet & Schnell. Their concept of a building that was exuberantly neo-baroque, with later art deco flourishes, is linked to the Beau-Rivage a rotunda of classical simplicity.

There was no question, of course, of saving on quality. The central dome of the main dining room is by Dickmann.

The Zurich painter, Haberer, created the fresco in the Rotonde. The bronze chandeliers and ornamental wall lights were supplied by Thiébaud of Paris.

The stylist Chiara was responsible for the design of the glass panels which decorate the lift and which are identical to those in the Paris Ritz. Neo-baroque is known for its highly ornamental decorative styling which certainly gave great pleasure to the hotel guests of that period.

Whilst the Maison Pic is celebrating its 120th anniversary and upmarket gourmet dining, with three generations awarded the famous three stars in the Michelin Guide, Anne-Sophie Pic, the youngest member of the dynasty, has decided to become the first to practise her art outside its walls.

In opening a new restaurant in Lausanne, Anne-Sophie Pic’s aim was to imbue the Beau-Rivage Palace with the spirit of the Maison Pic, which has inspired her family for four generations.

Ashford Castle is a medieval castle turned five star luxury hotel near Cong on the Mayo/Galway border in Ireland, on the shore of Lough Corrib. Ashford Castle is a member of the Leading Hotels of the World organization.

A castle was built on the site in 1228 by the Anglo-Norman House of Burke following their defeat of the O’Connors, the Royal House of Connacht, who are still extant in the person of the O’Conor Don. The de Burgos would build several such castles throughout the province, including one on the mouth of the River Corrib around which was to grow the City of Galway, but Ashford would remain their principal stronghold in the vastness of a wild and untamed province. The principal legacy of the native O’Connors is to be seen at the gates of the estate in the form of the Romanesque Augustinian Abbey of Cong. It is in this abbey that Ireland’s last High King Ruaidrí Ua Conchobair died and from which came the greatest relic of his Court, the Cross of Cong, created to hold a piece of the True Cross and now in the National Museum of Ireland.

After more than three and a half centuries under the de Burgos, whose surname became Burke or Bourke, Ashford passed into the hands of a new master, following a fierce battle between the forces of the de Burgo’s and those of the English official Sir Richard Bingham, Lord President of Connaught, when a truce was agreed. In 1589, the castle fell to Bingham, who added a fortified enclave within its precincts. In 1715, the estate of Ashford was established by the Browne Family (Baron Oranmore), and a lodge in the style of a 17th-century French chateau was constructed.

The Estate was purchased in 1852 by Sir Benjamin Lee Guinness, who extended the estate to 26,000 acres (110 km2), built new roads, planted thousands of trees and added two large Victorian style extensions. The castle was drawn for Sir William Wilde’s book about County Galway. On his death in 1868, the estate passed to his son Lord Ardilaun, an avid gardener who oversaw the development of massive woodlands and rebuilt the entire west wing of the castle, designed by architect James Franklin Fuller. He also subsidised the operation of several steamboats, the most notable of which was the Lady Eglinton, which plied between the villages of the Upper Lough Corrib region and Galway City, thus opening the area to increased commerce. In a time of agitation by tenant farmers in the Land Wars of the late 19th century, epitomised by the action of tenants at nearby Lough Mask House (home of Captain Charles Boycott), he was considered by many to be an ‘improving’ landlord. Some of his efforts were unsuccessful, particularly the Cong Canal, also known as ‘the Dry Canal’, which was built to link Lough Mask and Lough Corrib but was a failure, due to its inability to hold water. Despite such setbacks, the love borne by him and his wife Olive, daughter of the 3rd Earl of Bantry, for the castle and the estate was deep and best epitomised by that fact that when he was ennobled in 1880 he derived his title from the island of Ardilaun, which formed part of the estate on Lough Corrib.

The Castle passed to Ardilaun’s nephew Ernest Guinness, who sold it to Noel Huggard in 1939. He opened the estate as a hotel, which became renowned for the provision of its country pursuits, such as angling and shooting. Noel Huggard’s parents had been in the hotel business in Waterville, County Kerry, since 1910 and his grand daughters, Louise and Paula, run The Butler Arms Hotel there to this day.

In 1951, the film director John Ford came to the west of Ireland to film what would become a movie classic, The Quiet Man, starring John Wayne and Maureen O’Hara. The grounds of Ashford Castle, as well as nearby Cong, formed the backdrop for much of the action in the film.

In 1970, Ashford Castle was bought by John Mulcahy, who oversaw its complete restoration and expansion, doubling its size with the addition of a new wing in the early 1970s, building a golf course and developing the grounds and gardens. In 1985, a group of Irish American investors, which included Chuck Feeney and Tony O’Reilly, purchased Ashford. The Castle was sold by these investors in 2007 for €50 million to Galway-based property investor Gerry Barrett and his family. While some of Mr Barrett’s extensive property loans will be managed by the Irish National Asset Management Agency (NAMA), Ashford was financed by Bank of Scotland (Ireland), who placed the property in receivership in November 2011,[6] though the hotel continues as a going concern, being run by the Tifco Hotel Group, an Irish hotel management company. In September 2012 it was voted the best resort in Ireland and the third best in Europe by Condé Nast Traveler.

In October 2012 the hotel was put up for sale and was valued at around €25 million, half of what Barrett paid in 2007. The hotel currently has 83 bedrooms, six of which are suites. Barret’s plan to add another 13 penthouse bedrooms and 30 lodges in the castle grounds has not gone through.

In its time the castle has played host to many notable guests, including: King George V of the United Kingdom, Emperor of India, and his consort Queen Mary; John Lennon; George Harrison; Oscar Wilde (whose father, Sir William Wilde, had an estate adjacent to Ashford, where the writer spent much of his childhood); LPGA Golfer Mindy Miller; U.S. President Ronald Reagan; H.R.H. The Prince Edward, Earl of Wessex; U.S. Senator Ted Kennedy; John Wayne; Brad Pitt; Pierce Brosnan; H.S.H. The Prince Rainier III of Monaco and his consort, H.S.H. The Princess Grace.

10. Amanjena Marrakech, Morocco

Amanjena (peaceful paradise) is the first Aman resort on the African continent and is located just outside the ancient city of Marrakech. Set within an oasis of palms and olive trees, Moorish heritage is reflected throughout the pisé-walled resort, including the Morocco luxury villas and pavilions that radiate out from an ancient bassin, echoing the style of a sultan’s palace. Amanjena offers a variety of guided excursions on foot, bicycle or private car into the medina, the souk and squares, palaces, gardens and craft shops of ancient Marrakech.

The resort
Amanjena, or ‘peaceful paradise’, is the first Amanresort on the African continent. The property is located just outside the ancient Moroccan city of Marrakech on the southern road to Ouarzazate, the gateway to the Sahara Desert. The High Atlas Mountains claim the Marrakech horizon and the Atlantic coast is just two hours away. The 18-hole Amelkis Championship Golf Course lies immediately alongside Amanjena, with a second course – the Royal Golf Course – just minutes away.

Known in Arabic as Al Medina al-Hamra, the ‘Red City’, due to its rosy-hued walls and structures, Marrakech was the inspiration for Amanjena’s design. The resort’s walls and Morocco luxury villas echo the city’s old pisé (rammed earth) buildings as well as the Berber villages that cling to the High Atlas Mountains. Green is also a predominant colour in the oasis of Marrakech – the colour of Islam, paradise, royalty and abundance. The colour of nature gilds Amanjena, too: its lawns and vines, its emerald-clay roofs, Moroccan marble fountains and the dazzle of hand-cut, glazed tiles known as zellij.

Dining
The Restaurant is open for dinner and specialises in authentic Moroccan and Mediterranean cuisine. Soft lighting lends warmth to the generously-proportioned room, centred by a scalloped onyx fountain surrounded by olive trees beneath a commanding central skylight. Arched moucharabieh wood screens decorate the upper reaches of onyx pillars while the tinted plâtre ciselé walls are the colour of honey, chiseled with Berber designs. Banquettes and tables line the walls. During the summer months, dinner seating is moved outdoors. The Thai Restaurant, situated alongside the swimming pool, is open for breakfast, lunch and dinner. The light-filled room features banks of glass doors and coral-tadlekt walls decorated with old Moroccan leather horse saddles. The Pool Terrace meanwhile is open for breakfast and lunch, overlooking the pool and adjacent golf course. Guests can also enjoy private dining in their Pavilion or Maison. Special dinners or buffets to celebrate a unique occasion can be arranged. Upon request, intimate dinners accompanied by local music can be organised in the Caidal Tent, a traditional and romantic venue situated in an olive grove. The two-storey Library features a fireplace and a six-metre, double-volume ceiling. A balcony runs along the perimeter of the second floor. Light filters in from dozens of windows cut on varying levels into the tadlekt walls. Recessed glass shelving houses books, magazines and newspapers, as well as DVDs and the distinctive green pottery of Tamegroute, a village in the Moroccan Sahara. A selection of travel books and board games is also available. The Library’s tables are of wild-cherry wood inlaid and stained to an ebony gloss. The room’s upper level is fringed by a Moucharabieh-screened railing which encircles most of the room. Cozy masria (Moroccan daybeds) frame the fireplace.

The Boutique is located within the cedar-ceilinged colonnade that embraces the main swimming pool. A variety of locally-crafted products is available for purchase including Moroccan art and handicrafts ranging from jewellery to brass lanterns, pottery and antiques. All fabric items for sale including tablecloths, shawls, caftans and djellabas are hand-woven. Some are created exclusively for Amanjena.

Medina


From the Arabic madina (city), the medina is the heart and soul of Marrakech. Largely surrounded by its original ramparts and 12th-century fortress walls of red earth, this ‘fully preserved historic town’, as UNESCO has called it, is a World Heritage Site. It presents a captivating inner world of winding lanes, old fondouks (inns), hammams and souks (shops) of every kind amidst the enticing smells of cumin, mint tea and barley bread baking in communal ovens.

Apart from the boutique in Amanjena, there is a profusion of shopping options within Marrakech. A number of specialist antique shops have recently opened and the numerous souks display great diversity. Rural markets, with their vegetables, sheep heads, mules, saddles and portable steam baths, are a delightful distillation of everyday Moroccan life. Amanjena offers guided tours through the souks: visiting tanneries, traditional bakeries and hammams, where everyday subsistence living has a charm unlike anywhere else, are immensely rewarding, as much can be drawn from their edifying and uncomplicated way of life.

Marrakech’s most memorable landmark is the 12th-century Koutoubia Minaret, the tallest structure in the city at 70 metres. Built in classic Moorish-Moroccan style, it is the oldest and grandest of the surviving Almohad-era towers. Established in the 14th century and completely rebuilt in the 16th century, the Ben Youssef Medersa is among the most beautiful of Marrakech’s buildings. Recently restored, the former Islamic theological college features zellij tiles, carved wood and intricate plaster work.

The ancient Place Djemaa el Fna is one of the busiest squares in Africa, bustling with dancers, acrobats and musicians by day, and transforming into an open-air restaurant at night.

Marrakech is rife with palaces, but the 16th-century El Badi Palace, now in ruins, was once the largest and most luxurious of them all. Every June it takes on a hint of its former grandeur, hosting the National Festival of Popular Arts, Morocco’s biggest annual music and folklore festival. The palace also incorporates the Koutoubia Minbar, a masterpiece of medieval religious craft.

Spa

The hammam or steam bath is as central to Moroccan life as mint tea. Not surprising then that it is also the steamy heart of Amanjena’s Spa. Each hammam (one for men, another for women) is complemented by showers, washrooms, a dressing area and a glassed-in whirlpool, opening onto a fountain courtyard bordered by a pisé-wall two metres high. The hammam itself is a stepped, two-chamber room of Moresque arches meeting a vaulted ceiling.

Treatments available at the Spa include massages, facials, scrubs and wraps, as well as manicures and pedicures. The Spa also incorporates a timber-floored gym.
