Hot Fitness Tip

     

The USDA recommends 3 cups of dairy a day, preferably low-fat or fat-free milk, yogurt or cheese. Avoid milk altogether if you’re trying to lose weight but if you don’t want to give it up, use organic whole milk (in very small amounts) over skim (“back to the whole food idea”). For added calcium, choose leafy greens both cooked and raw, like collard and turnip greens, kale, bok choy or beans and fish, like canned salmon with bones or sardines with bones.

The Other Side

A Father was once reading a magazine and his little daughter every now and then distracted him. To keep her busy, he tore one page on which was printed the map of the world. He tore it into pieces and asked her to go to her room and put them together to make the map again.

He was sure she would take the whole day to get it done. But the little one came back within minutes with perfect map……When he asked how she could do it so quickly, she said, “Oh…. Dad, there is a man’s face on the other side of the paper….. I made the face perfect to get the map right." She ran outside to play leaving the father surprised.

This incident taught him that there is always the other side to whatever you experience in this world.

Whenever we come across a challenge or a puzzling situation, look at the other side…. You will be surprised to see an easy way to tackle the problem.

Life is short, energy limited, with this limited energy we have to find the unlimited; with this short life we have to find the eternal. Don't waste it with unimportant matters

Healthy Recipe

     

Summer Veggie Soup

Makes: 6 servings

Nutritional Information:
Per Serving

Calories: 210 Kcal, Fat: 3.5 g, Carbohydrate: 38 g, Protein: 9 g, Fiber: 7 g.


Ingredients:

  • 1 Tbsp. extra virgin olive oil

  • 1 medium onion, chopped

  • 4 cloves garlic, minced

  • 2 carrots, sliced into 1/4-inch pieces

  • 32 oz. reduced-sodium chicken broth (vegetable broth may be substituted)

  • 1 (15-oz.) can chickpeas, drained and rinsed

  • 2 medium yellow squash, sliced into 1/4-inch pieces

  • 1 medium zucchini, sliced into 1/4-inch pieces

  • 2 medium potatoes, diced into 1/2-inch pieces

  • 1 cup corn kernels, fresh or frozen

  • Salt and freshly ground black pepper to taste

  • 6 asparagus spears, cut into 1-inch pieces

  • 2 plum or Roma tomatoes, coarsely chopped

  • 1/4 cup fresh basil, finely chopped

  • 1/4 cup of fresh chives, coarsely chopped

 


Directions:

  • In soup pot, heat oil over medium heat. Add onion and garlic and sauté about 6-8 minutes. Add carrots and cook until softened, about 5 minutes.

  • Stir in broth, chickpeas, squash, zucchini, potatoes, corn, salt and pepper. Bring to boil. Reduce heat and simmer about 5 minutes. Stir in asparagus and cook 2 minutes or until squash and potatoes are tender, but not mushy. Then stir in tomatoes and cook 2 minutes.

  • Place in bowls, garnish with basil and chives and serve.
