Eggplant Curry
Ingredients:
- 2 tablespoons coconut oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 large eggplant, chopped
- 1 can (14 oz) coconut milk
- 1 can (14 oz) diced tomatoes
- 1 cup chickpeas, cooked or canned
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
- In a large pot, heat the coconut oil over medium heat. Add the onion, garlic, and ginger, and sauté until softened.
- Stir in the curry powder, cumin, and coriander, and cook for another minute.
- Add the chopped eggplant and cook for 5 minutes, until it begins to soften.
- Pour in the coconut milk and diced tomatoes, and bring to a simmer.
- Add the chickpeas, salt, and pepper. Cover and cook for 20-25 minutes, until the eggplant is tender.
- Garnish with fresh cilantro before serving. Serve with rice or naan bread.
Eggplant and Black Bean Burritos
Ingredients:
- 1 large eggplant, diced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 can black beans, drained and rinsed
- 1 cup cooked rice
- 1 cup salsa
- 8 large flour tortillas
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/4 cup chopped green onions
- Fresh lime wedges
Instructions:
- Preheat the oven to 400°F (200°C).
- Toss the diced eggplant with olive oil, cumin, and chili powder.
- Spread the eggplant on a baking sheet and roast for 20-25 minutes, until tender.
- Combine the roasted eggplant, black beans, cooked rice, and salsa in a large bowl.
- Fill each tortilla with the eggplant mixture and top with shredded cheese.
- Roll up the burritos and place them in a baking dish.
- Bake for 10-15 minutes, until the cheese is melted.
- Garnish with chopped green onions and serve with lime wedges.
