BAJRA-SHRIMP WRAP

 

 

 

These little soufflés are light as air and very simple to make.

Serving:  4

Ingredients

  • 50 gms maida / whole wheat flour

  • 200 gms bajra flour

  • water to make the dough

  • 500 gms shrimp (deveined)

  • 1 tbsp red chilli paste

  • 2 tbsp tomato puree

  • 1 lemon

  • 2 onions

  • 7-8 garlic flakes

  • 1 tbsp garam masala

  • 1/2 tbsp ginger

  • 1/2 tbsp turmeric

  • 3-4 green chillies (finely chopped)

  • 1/2  bunch coriander

  • salt and pepper to taste

  • 15 gms desiccated coconut

  • 15 ml mustard oil

Directions

 

For the filling

  • Combine bajra, maida, a pinch of salt and water to form a smooth dough. Cover and keep aside.

  • Make a paste of onion, garlic and ginger.

  • Heat oil in a nonstick pan and saute onion-ginger-garlic paste till oil separates.

  • Toss in the shrimp, green chillies, dry masalas, stir fry till the mixture turns golden brown.

  • Add tomato puree, lemon juice, coriander, season with salt and pepper. Remove from fire and garnish with desiccated coconut.

To make the wrap

  • Divide dough into 16 balls and roll out into circles. Roast the wraps on a nonstick pan till done.

  • Line 2 tablespoon of shrimp mixture in the middle of each wrap, roll and place on a hot tawa or in a microwave. Grill for a minute or two.

  • Serve hot with ketchup.
