APPLE-CINNAMON MUFFINS |

Muffins
INGREDIENTS

2 cups whole wheat flour
-
1/4 cup plus 2 tablespoons sugar

1 tablespoon baking powder
-
1/4 teaspoon baking soda
-
1 1/2 teaspoons ground cinnamon
-
3/4 cup plus 2 tablespoons apple juice
-
1/2 cup fat-free egg substitute or 4 egg whites, lightly beaten
-
2 apples, chopped
-
1/3 cup cranberries, chopped
-
1/3 cup chopped dates
INSTRUCTIONS

Combine the flour, sugar, baking powder, baking soda, and cinnamon in a bowl, and stir well.

Add the apple juice, egg whites, and apples, and stir until dry ingredients are moistened. Fold in the cranberries and dates.

Coat muffin pan with nonstick cooking spray (nonfat), and fill 3/4 full with the batter. Bake at 350 degrees F for 15-18 minutes.

Allow muffins to sit for 5 minutes before serving.
