APPLE-CINNAMON MUFFINS

SERVES:-  12 Muffins


INGREDIENTS

  • 2 cups whole wheat flour

  • 1/4 cup plus 2 tablespoons sugar

  • 1 tablespoon baking powder 

  • 1/4 teaspoon baking soda 

  • 1 1/2 teaspoons ground cinnamon 

  • 3/4 cup plus 2 tablespoons apple juice 

  • 1/2 cup fat-free egg substitute or 4 egg whites, lightly beaten

  • 2 apples, chopped 

  • 1/3 cup cranberries, chopped 

  • 1/3 cup chopped dates 

INSTRUCTIONS

  • Combine the flour, sugar, baking powder, baking soda, and cinnamon in a bowl, and stir well.

  • Add the apple juice, egg whites, and apples, and stir until dry ingredients are moistened. Fold in the cranberries and dates.

  • Coat muffin pan with nonstick cooking spray (nonfat), and fill 3/4 full with the batter. Bake at 350 degrees F for 15-18 minutes.

  • Allow muffins to sit for 5 minutes before serving.
