Instructions :   

  • Preheat the oven to 350 Deg. F. Spray a 15 x 10 x 2 inch baking pan with vegetable oil spray.

  • Make the cake: Combine the chocolate and water in a small saucepan and warm over low heat for 3 minutes, until melted and smooth. Set aside to cool slightly.

  • In a small bowl, combine the flour and baking soda. In a mixing bowl, mix the sugar and prunes.

  • Add teh vanilla and buttermilk and stir thoroughly. Add the chocolate and stir well.

  • In the mixing bowl of an electric mixer, beat the egg white on medium speed until frothy.

  • Fold into the prune mixture. Slowly add the flour mixture in quarter-cup amounts.

  • Combine gently, slowly folding with a spatula, until smooth.

  • Pour into the pan and bake for 25 minutes.

  • Cool completely before frosting.

  • Make the frosting with 1 cup confectioners' sugar 1/2 teaspoon pure vanilla extract, and complete with icing.


Ingredients:

  • 1 teaspoon Baking Soda

  • 1 cup Buttermilk

  • 4 ounces Chocolate chunks/semi-sweet (Hersheys) coarsely chopped

  • 6 large Egg white lightly beaten

  • 2 cups Flour All Purpose

  • 1 cup Prunes dried stewed (pitted)
    (Or two 2-1/2 ounce jars strained baby food)

  • 2 cups Sugar Granulated

  • 1 teaspoon Vanilla Extract

  • 1/2 cup Water
