Instructions :

Wash and boil the grapes. Strain the juice and pulp.

Keep stirring on low heat till the mixture is thick. Allow to cool.

Mix egg yolks and icing sugar in a bowl.

Place the bowl over a double boiler and whip until the mixture turns
pale and doubles in volume.

Allow to cool. Fold in the whipped cream and the grape concentrate.

Adjust the sweetness.

Pour into four chilled parfait glasses and freeze.
