Instructions :

  • Wash and boil the grapes. Strain the juice and pulp.

  • Keep stirring on low heat till the mixture is thick. Allow to cool.

  • Mix egg yolks and icing sugar in a bowl.

  • Place the bowl over a double boiler and whip until the mixture turns pale and doubles in volume.

  • Allow to cool. Fold in the whipped cream and the grape concentrate.

  • Adjust the sweetness.

  • Pour into four chilled parfait glasses and freeze.


Serves : 4


Ingredients :

  • 100 g black grapes

  • 2 egg yolks

  • 50 g icing sugar

  • 200 ml cream, whipped
