BLUE CHEESE TENDERLOIN STEAKS

Serves: 6

INGREDIENTS:

  • 3 pounds Steak Shell Lean

  • 1-1/2 ounces Cream Cheese

  • 1 ounce Blue Cheese

  • 6 teaspoons Yogurt Plain, low fat

  • 3 teaspoons Onion

  • 3/16 teaspoon White pepper

  • 1-1/2 medium Garlic clove crushed, 1 medium

  • 3 teaspoons Parsley dried

METHOD:

  • Combine cheeses, yogurt, onion and pepper; reserve. 

  • Rub each side of steaks with garlic. Place steaks on rack in broiler pan so surface of meat is 2-inches from heat. Broil 5 to 6 minutes. Season with 1/4 teaspoon salt. 

  • Turn and broil 3 to 4 minutes. Season with remaining salt. Top each steak with an equal amount of reserved cheese mixture. Broil an additional 1 to 2 minutes. Garnish with parsley.
