BROWN RICE SALAD

MAKES: 2 servings. 


Ingredients

  • Brown rice - 25 gms

  • Mushrooms - 50 gms

  • Beans, carrots, and peas, combined - 1/2 cup

  • Capsicum (medium size) 1

  • Olive oil - 1 tsp

  • Cloves - 5

  • Celery - 1 bunch

  • Boiled chicken or fish (optional) - 50 gms

  • Salt, pepper, and garlic to taste.

Directions

  • Pressure cook the brown rice and keep aside. (To prevent loss of precious B Vitamins use minimum water to wash the rice.)

  • Steam the vegetables - mushrooms, beans, carrots, peas, capsicum - until tender and keep aside.

  • Prepare a dressing by mixing together the olive oil, garlic, salt, pepper celery, and cloves

  • Combine the rice and vegetables and stir in the dressing.  (And the boiled chicken or fish, if you prefer non-vegetarian.)

  • Chill and serve.
