Instructions :   

  • Chop potato and green pepper. 

  • In large skillet, cook onion and garlic in butter until tender-crisp. 

  • Add potato; cook 2 minutes. Stir in tomatoes, thyme, and spices. Simmer stirring frequently, 3 to 5 minutes. 

  • Season with hot pepper sauce and serve with eggs, if desired.

  • 1/8 teaspoon Cloves, ground

  • 1/8 teaspoon Cayenne pepper

  • 2 cups Ham smoked lean chopped

  • 1 medium Pepper green
