Ingredients
- 250 g (8 oz) green beans
- 375 g (12 oz) courgettes, diced
- 475 g (15 oz) can black-eye beans, drained
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 garlic clove, crushed
- 2 tablespoons chopped parsley
- salt and pepper
Directions

Cut the green beans into 2.5 cm (1 inch) lengths and cook in lightly
salted boiling water for 5 minutes. Add the courgettes and cook for a
further 5 minutes. Drain thoroughly and place in a bowl with the
black eye beans.

Add the remaining ingredients, with salt and pepper to taste, while still
warm and mix well to combine. Leave to cool and serve with toasted
slices of crusty bread, if liked.
