CHICKEN WITH VEGETABLES AND RICE

  Ingredients

  • Rice.

  • Pinch of salt.

  • 2 cups water.

  • 1 cup rice

  • CHICKEN.

  • 1 tablespoon olive oil

  • 1/2 onion

  • 1 green pepper

  • 1/2 teaspoon oregano

  • 1 teaspoon black pepper

  • 1/4 teaspoon salt

  • 1/2 teaspoon garlic powder

  • 1/2 cup water

  • 4 boneless, skinless chicken breasts

  • 1 tablespoon soy sauce (reduced-sodium)

  • 1 1/2 tablespoons tomato paste

Directions

  • To prepare rice, add salt to water and bring to a boil. Stir in rice. Reduce heat to medium, and continue to cook for 25-30 minutes, stirring every 5 minutes.

  • To prepare chicken, rinse and cut all visible fat off of chicken breasts. Chop onions and green peppers, add olive oil and saut� in a skillet for 1-2 minutes. Add oregano, black pepper, salt and garlic powder; stir ingredients well and cook 1 minute. Add water and chicken and cook 5-7 minutes.

  • Add soy sauce and tomato paste. Cook 10-12 more minutes, stirring chicken every few minutes. Spoon rice onto plates, top with chicken breast and sauce.
