Instructions :

  • Cut each pepper into sixths. Slice and separate the onion into rings. Halve the garlic cloves.  

  • In 2-quart micro-safe bowl, combine sugar, salt, water, and vinegar. Microwave on HIGH for 8 to 14 minutes or until mixture boils.

  • In clean 1-quart jar, pack remaining ingredients. Carefully pour hot vinegar mixture over vegetables in jar. Cover; let stand in refrigerator 1 week before serving. Store in refrigerator. Yields 1-quart.

  • Vinegar 1 cup

  • Pepper red 1 medium

  • Pepper green 1 medium

  • Pepper yellow 1 medium

  • Onion 1 medium

  • Garlic clove 2 medium

  • Tarragon 1/4 teaspoon
