Ingredients
- 2 cups whole wheat flour
- 1/4 cup plus 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/4 teaspoon baking soda
- 1 1/2 teaspoons ground cinnamon
- 3/4 cup plus 2 tablespoons apple juice
- 1/2 cup fat-free egg substitute or 4 egg whites, lightly beaten
- 2 apples, chopped
- 1/3 cup cranberries, chopped
- 1/3 cup chopped dates
Instructions
- Combine the flour, sugar, baking powder, baking soda, and cinnamon in a bowl, and stir well.
- Add the apple juice, egg whites, and apples, and stir until dry ingredients are moistened. Fold in the cranberries and dates.
- Coat muffin pan with nonstick cooking spray (nonfat), and fill 3/4 full with the batter. Bake at 350 degrees F for 15-18 minutes.
- Allow muffins to sit for 5 minutes before serving.
