Ingredients
- 100 g black grapes
- 2 egg yolks
- 50 g icing sugar
- 200 ml cream, whipped
Instructions
- Wash and boil the grapes. Strain the juice and pulp.
- Keep stirring on low heat till the mixture is thick. Allow to cool.
- Mix egg yolks and icing sugar in a bowl.
- Place the bowl over a double boiler and whip until the mixture turns pale and doubles in volume.
- Allow to cool. Fold in the whipped cream and the grape concentrate.
- Adjust the sweetness.
- Pour into four chilled parfait glasses and freeze.
