Ingredients
- Rice.
- Pinch of salt.
- 2 cups water.
- 1 cup rice
- CHICKEN.
- 1 tablespoon olive oil
- 1/2 onion
- 1 green pepper
- 1/2 teaspoon oregano
- 1 teaspoon black pepper
- 1/4 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 cup water
- 4 boneless, skinless chicken breasts
- 1 tablespoon soy sauce (reduced-sodium)
- 1 1/2 tablespoons tomato paste
Instructions
- To prepare rice, add salt to water and bring to a boil. Stir in rice. Reduce heat to medium, and continue to cook for 25-30 minutes, stirring every 5 minutes.
- To prepare chicken, rinse and cut all visible fat off of chicken breasts. Chop onions and green peppers, add olive oil and saut in a skillet for 1-2 minutes. Add oregano, black pepper, salt and garlic powder; stir ingredients well and cook 1 minute. Add water and chicken and cook 5-7 minutes.
- Add soy sauce and tomato paste. Cook 10-12 more minutes, stirring chicken every few minutes. Spoon rice onto plates, top with chicken breast and sauce.
