Ingredients
- Onions 1 cup, chopped
- Green chiles 4 ozs, drained and chopped
- Bell peppers chopped 1 cup
- Taco seasoning mix 3/4 oz, half package
- Fat-free spaghetti sauce 26 ozs
- Mostaccioli pasta 10 ozs, cooked and drained
- Canned dark red kidney beans 15 1/2 ozs, drained and rinsed
- Low-fat Monterey jack cheese shredded 2 ozs
- Water 1/3 cup
Instructions
- In large saucepan, cook onions and bell peppers until tender.
- Stir in spaghetti sauce, beans, water, green chilies, and taco seasoning mix.
- Mix well and heat to boiling. Reduce heat and cook, uncovered, for 15 minutes, stirring occasionally.
- Toss hot pasta and one-half sauce.
- Spoon remaining sauce over top; sprinkle with cheese.
