Ingredients
- 450g/1 lb ripe red plums, quartered and stoned
- 200ml/ 7 fl oz/ skimmed milk
- 60ml/4 tbsp skimmed milk powder
- 15ml/1 tbsp light muscovado sugar
- 5ml/ 1 tsp vanilla essence
- 75g/ 3 oz self-raising flour
- 2 egg whites
- Icing sugar, to sprinkle
Instructions
- Preheat the oven to 220C/425F/ Gas 7. Lightly oil a wide, shallow ovenproof dish and add the plums.
- Pour the milk, milk powder, sugar, vanilla, flour and egg whites into a food processor. Process until smooth.
- Pour the batter over the plums. Bake for 25-30 minutes, or until well risen and golden. Sprinkle with icing sugar and serve immediately.
