Ingredients
- Sugar 1 Tablespoon
- Salt 1 Tablespoon
- Water 2 cups
- Vinegar 1 cup
- Pepper red 1 medium
- Pepper green 1 medium
- Pepper yellow 1 medium
- Onion 1 medium
- Garlic clove 2 medium
- Tarragon 1/4 teaspoon
Instructions
- Cut each pepper into sixths. Slice and separate the onion into rings. Halve the garlic cloves.
- In 2-quart micro-safe bowl, combine sugar, salt, water, and vinegar. Microwave on HIGH for 8 to 14 minutes or until mixture boils.
- In clean 1-quart jar, pack remaining ingredients. Carefully pour hot vinegar mixture over vegetables in jar. Cover; let stand in refrigerator 1 week before serving. Store in refrigerator. Yields 1-quart.
