Ingredients
- 3 medium Garlic clove minced
- 4-1/2 medium Tomato raw
- 6 Tablespoons Olive oil
- 1-1/2 pounds Shrimp, jumbo
- 3/8 cup Wine table, white, dry
- 3/8 pound Feta Cheese
- 3 Tablespoons Parsley fresh
Instructions
- Shell the shrimp. Peel and dice the tomato. In a large heavy skillet cook the garlic and the tomatoes in 3 tablespoons of the oil over moderate heat, stirring occasionally, for 15 to 20 minutes, or until the tomato sauce is thickened, and season the sauce with salt and pepper.
- In another large heavy skillet heat the remaining 1 tablespoon oil over moderately high heat until it is hot but not smoking and in it saute the shrimp, stirring, for 1 minute.
- Add the wine and deglaze the skillet, scraping up the brown bits. Add the tomato sauce, Feta, and salt and pepper to taste, simmer the mixture for 3 minutes, or until the shrimp are cooked through and sprinkle it with minced parsley.
