Ingredients
- 6 cups Spinach, 1 cup
- 3/4 cup Yogurt Plain, low fat
- 3/16 cup Mayonnaise
- 3/16 medium Cucumber, 1 medium
- 3/8 cup Radishes raw
- 3/16 cup Onion minced
- 1-1/2 medium Onion, 1 medium
- 1-1/8 medium Garlci clove crushed, 1 medium
- 3/8 teaspoon Salt
- 3/16 teaspoon Tarragon
- 3/4 teaspoon Vinegar, white wine
Instructions
MICROWAVE DIRECTIONS:
- Discard coarse stems from spinach and wash the leaves well and drain. Peel, seed and finely chop the cucumber. Mince the radish and green onions.
- In a large heavy saucepan cook the spinach in the water clinging to the leaves, covered, over moderate heat, stirring once or twice, for 3 to 4 minutes, or until it is wilted. Refresh it under cold water, and drain it well in a colander. Squeeze the spinach dry by handfuls and chop it fine.
- In a bowl stir together well the spinach, yogurt, mayonnaise, cucumber, radish, onion, scallions, crushed garlic, tarragon, vinegar, and salt and pepper to taste. Serve the dip with crudites.
