Ingredients
- 3 cups- Flour All Purpose
- 4 teaspoons- Baking Powder
- 1 teaspoon- Salt
- 1/2 teaspoons- Baking Soda
- 1 cup- Zucchini raw coarsely shredded
- 6 ounces- Cheddar Cheese coarsely shredded
- 1/4 cups- Scallions raw chopped
- 3 pieces (3 oz.)- Parsley fresh chopped
- 1 Tablespoon- Dill weed snipped (or 2 teaspoons dried)
- 1 serving- Peppers jalapeno (Optional, to taste)
- 2- large Egg Chicken beaten
- 1 cup- Buttermilk
- 4 teaspoons- Butter unsalted melted (or margarine or vegetable oil)
Instructions
- Preheat oven to 350 degrees.
- Grease 9x5 loaf pan or use teflon pan.
- Wisk together flour, baking powder, salt, and baking soda.
- Add coarsely shredded zucchini and cheddar, chopped scallions, parsley, and snipped dill. Toss with dry ingredients to coat.
- Wisk in separate bowl eggs, buttermilk, and butter (margarine or oil).
- Add to the other ingredients and mix with a few light strokes until ingredients are all moistened. It will make a thick batter. Spread out in loaf pan. Bake in centre of oven for 55 to 60 minutes until a toothpick inserted in the centre comes out dry.
- Cool in pan for 5 - 10 minutes, then unmould to cooling rack until completely cooled.
