Ingredients
- Chick-peas 4 cup
- Olive oil- 2 tbs
- Onion 2 medium
- Tomato 3 medium
- Tomato paste 1 cup
- Water- 1 cup
- Coriander (ground) 1 tsp
- Cumin seed 1 tsp
- Cayenne pepper- I tsp
- Turmeric powder 1/4 tsp
- Cilantro-1/2 cup
- 11/2 tsp salt
Instructions
- Soak chick-peas overnight in water to cover. Drain and add water to cover to a depth of 11/2 inches .
- Add salt and simmer for 2 hours or longer until chick-peas are tender .
- Meanwhile chop the tomatoes and slice 2 medium onions
- Heat oil in a saucepan ,add onions and cook until wilted
- Add tomatoes and tomatoes paste , water and spices
- Cook chick-peas and simmer 30 min longer
- Serve hot over rice , garnished with onion cut into rings and cilantro .
