Ingredients
For the dressing:
- tsp. Dijon-style mustard
- 2 tsp. olive oil
- 4 tbsp. vinegar
- tsp. oregano
- A few sprigs of lemon grass
- Salt and pepper to taste
FOR THE TOMATOES:
- 6 Medium size tomatoes
- 100gm fresh cheese
- Salt and pepper to taste
Instructions
- Slice off the tops of the tomatoes. Scoop out the pulp and keep aside.
- Sprinkle a little salt inside tomatoes and chill.
- Mix all the ingredients of the dressing and whisk briskly. Chill for 15 minutes.
- Then, strain the dressing and crumble the cheese.
- Mix in the two along with the tomato pulp. Rub together till soft.
- Stuff the tomatoes with the mixture and garnish with mint. Chill and serve.
