4 tablespoons light French dressing
- 1 garlic clove, crushed
- 275g (9oz) courgettes, thinly sliced
- 500g (1 lb) salad leaves
- 50 g (2 oz) green or black olives, halved and pitted
- 1 tablespoon pine nuts
- salt and pepper
Put the French dressing and garlic in a salad bowl. Add the sliced courgettes and toss well. Leave to stand for 30 minutes to allow the courgettes to absorb the flavour of the dressing.
Tear the salad leaves into manageable pieces and add to the courgettes and dressing with the olives and pine nuts. Season with salt and pepper to taste. Toss the salad thoroughly before serving.
