9. Vacay Vibes Smoothie Bowl

Ingredients

  • 1/2 cup frozen cauliflower
  • 1/2 cup frozen mango
  • 1/2 freshly squeezed lemon juice
  • 1 tablespoon turmeric
  • 2 scoops plan-based protein powder
  • 2 tablespoons coconut oil

Method

  1. Add all the ingredients into a high-speed blender and process until smooth.
  2. Eat half now, and half tomorrow morning!

10. Raspberry Chia Pudding

Ingredients

  • 1/2 cup Raspberries
  • 1/4 cup Chia seeds
  • 2 tbsp Vital Proteins Collagen Peptides
  • 1 tbsp Powdered erythritol
  • 3/4 cup Unsweetened almond milk
  • 1/4 tsp Vanilla extract

Method:

  1. Mash the raspberries in a small bowl.
  2. In another bowl, stir together the chia seeds, collagen, and powdered sweetener. 
  3. Stir in the almond milk, then the vanilla and mashed raspberries.
  4. Chill overnight. Stir again before serving.
